Moong dal, three ways

The everyday dal that quietly does everything: fast, gentle on the stomach, and genuinely high in protein. Here's how to make it, and why each step matters.

Why this recipe works

Moong (split, skinned) is the most easily digested of the dals. It's low in the oligosaccharides that make other legumes cause bloating, so it needs no soaking and cooks in minutes. You still get the legume win: protein + fibre in one pot. The tempering (tadka) isn't decoration. It's how the spices' fat-soluble aroma compounds are unlocked.

Ingredients

  • Split moong dal1 cup
  • Turmeric½ tsp
  • Cumin seeds1 tsp
  • Ginger, grated1 tbsp
  • Garlic, chopped3 cloves
  • Tomato, chopped1 medium
  • Green chilli1
  • Ghee or oil1 tbsp
  • Black pepper & saltto taste
  • Coriander, to finishhandful

Method

  1. 1

    Rinse the moong dal, then simmer with the turmeric and about 3 cups water until soft, 15–18 min (or one whistle in a pressure cooker).

    Why: turmeric colours the dal and adds curcumin; gentle cooking breaks down the legume's structure for easy digestion.

    Make the tadka: heat the ghee, add cumin seeds and let them sizzle for ~20 seconds, then add ginger, garlic and green chilli.

    Why: cumin's aroma compounds are fat-soluble, so blooming them in hot ghee releases far more flavour than adding them to water.

    Add the tomato; cook until it collapses and the fat separates. Stir this tadka into the cooked dal with salt, and simmer 5 minutes.

    Why: the tomato's acidity balances the earthy dal; simmering marries the tadka into the base.

    Finish with coriander and a fresh crack of black pepper. Serve with rice or roti.
