Does a pressure cooker destroy nutrients?
The pressure cooker is the workhorse of the Indian kitchen, and also the target of a stubborn worry, that its fierce heat wrecks nutrition. The science says close to the opposite.

Because pressure cooking is fast and uses little water, it often keeps more of the heat-sensitive, water-soluble vitamins than long open boiling does.1
The pressure cooker whistle is the sound of Indian dinner. Yet a persistent belief says all that pressure and heat must be destroying the goodness in your dal. It is worth pulling apart, because the truth runs the other way.
What actually destroys nutrients
Three things damage the fragile, water-soluble vitamins (like C and the B group): heat, time, and water (they leach out into the cooking liquid). Of these, prolonged time and leaching into discarded water usually do far more damage than a brief burst of high temperature.1
Why pressure cooking often wins
A pressure cooker reaches about 120°C, but for a fraction of the time of open boiling, and it uses little water. Less time and less water mean less total nutrient loss, so studies often find pressure cooking retains vitamins as well as, or better than, boiling.2 It also breaks down anti-nutrients like phytate and lectins in beans, and makes tough legumes more digestible.
Where to take care
Two honest caveats. Do not over-cook to mush, past a point you rupture cells and lose both texture and nutrients. And do not pour away the cooking liquid, the dal water and the liquid from beans hold much of what leached out, so use it in the gravy rather than draining your nutrients down the sink.
The everyday upshot
For rajma, chana, tough dals and dense vegetables, the pressure cooker is not a nutritional compromise, it is often the better choice, faster, more digestible, and kinder to vitamins than a long simmer.
