Why this recipe works

The one science point that matters here is when the lemon goes in. Lemon juice is squeezed off the heat, because vitamin C is fragile and breaks down with heat, so adding it at the end keeps both the fresh tang and the vitamin. The turmeric, mustard, urad dal and peanut tempering gives colour, crunch and a little protein.

    Temper mustard, urad dal, peanuts, curry leaves, green chilli and hing in oil until the peanuts colour.

    Stir in the turmeric, then fold through the cooled rice until evenly yellow.

    Why cooled rice: cold, separate grains coat evenly and do not turn sticky, which is why lemon rice is the classic use for leftover rice.

    Take the pan off the heat and squeeze in the lemon.

    Why off the heat: vitamin C degrades with heat, and the fresh tang fades, so the lemon goes in last to keep both.

    Toss and serve warm or at room temperature.
