Why this recipe works

Poha is rice that has been parboiled, rolled flat and dried, so it is already cooked. That is the whole trick: it needs only a brief rinse to soften, not boiling, which is why a full breakfast comes together in minutes. There is a nutrition bonus hiding in the classic finish too. Flattened rice carries a useful amount of iron, and the traditional squeeze of lemon is not just for tang: its vitamin C sharply improves how much of that plant iron your body can absorb. An old habit that turns out to be sound science.

Ingredients

  • Thick poha (flattened rice)2 cups
  • Onion, chopped1
  • Potato, small diced (optional)1 small
  • Peanuts3 tbsp
  • Mustard seeds + curry leaves1 tsp + 8
  • Green chilli, slit1
  • Turmeric, salt, pinch sugar¼ tsp, to taste
  • Lemon + coriander, oil½ + handful

Method

    Put the poha in a colander and rinse gently under running water until the grains just soften, a few seconds. Let it drain, and leave it alone. Do not soak it.

    The trick: poha is pre-cooked, so it rehydrates in seconds. Sitting it in water turns it to paste. A quick rinse and drain is all it needs to fluff up.

    Heat oil, add the mustard seeds and wait for them to pop. Add the peanuts and fry until they colour, then the curry leaves, chilli and onion (and potato, if using). Cook until soft.

    Why: mustard seeds only release their nutty warmth once they pop in hot oil. Frying the peanuts first keeps them crunchy and adds a little protein and good fat.

    Stir in the turmeric, salt and a pinch of sugar. Add the drained poha and fold it through gently until evenly yellow and heated. Cover for a minute.

    Why: fold, do not stir hard, or the soft grains break and clump. A minute under a lid lets the steam warm it through evenly.

    Turn off the heat. Squeeze over the lemon and scatter the coriander. Serve at once, on its own or with a cup of chai.

    Do not skip the lemon: its vitamin C converts the poha's iron into a form your gut absorbs far better. Add it at the end so the heat does not destroy the vitamin.
