Jaljeera

Literally "cumin water": a sharp, savoury, minty cooler built on roasted cumin. It is the low-sugar member of the summer-drink family, refreshing and traditionally taken to wake up the appetite.

Why this recipe works

Where aam panna leans on sugar for its energy, jaljeera barely uses any, which makes it the lighter summer drink: mostly water, herbs, tang and spice. Its heart is roasted cumin, long taken before or after a meal to rouse a heat-dulled appetite and settle digestion, a traditional use with some early support. The black salt replaces a little of what you sweat out, the mint cools, and the tamarind or lemon brings sourness and vitamin C. So it hydrates and refreshes with almost no sugar. The only thing to keep an eye on, as ever, is the salt.

Ingredients

  • Roasted cumin powder2 tsp
  • Mint + coriander leaves½ cup + ¼ cup
  • Tamarind pulp (or amchur)1 tbsp
  • Black salt + rock salt1 tsp
  • Black pepper + ginger¼ tsp + 1 cm
  • Green chilli (optional)1
  • Lemon + a little jaggery½ + 1 tsp
  • Cold water, ice, boondi (optional)4 cups

Method

    If starting from whole cumin, dry-roast the seeds until fragrant and grind them. Blend the mint, coriander, ginger, chilli, tamarind and a little water into a smooth green paste.

    Why roast the cumin: dry-roasting drives off moisture and deepens cumin's warm, nutty aroma. It is the defining flavour of the drink, and the traditional digestive at its centre.

    Stir the green paste, roasted cumin, both salts, pepper and the little jaggery into the cold water. Squeeze in the lemon.

    Why so little jaggery: just a teaspoon to round the sharpness, not to sweeten. This is what keeps jaljeera light where a sweet cooler is not.

    Taste and balance the sour, salty and spicy until it is lively. Chill well, then serve over ice, with a spoon of boondi floated on top if you like.

    Balance is the dish: jaljeera should hit sour, salty, spicy and cool all at once. Adjust to taste; there is no single right ratio.
