Why this recipe works
When you sweat through a hot day you lose water, salts and some energy, and aam panna happens to replace all three. The black salt restores sodium and potassium, the small amount of sugar or jaggery gives quick energy and, as with an oral rehydration drink, helps the body take up the salt and water together, and raw green mango brings tang and vitamin C. That is the real reason it has always been the drink reached for against the heat, it is a homemade rehydration cooler. The honest part: it is still a sweetened drink, so it is a smart swap for a fizzy soft drink, not a licence to drink jugs of it. Keep it as an occasional, genuinely useful summer cooler.
Ingredients
- Raw (green) mangoes2 medium
- Jaggery or sugar4 to 5 tbsp
- Black salt (kala namak)1 tsp
- Roasted cumin powder1 tsp
- Black pepper, a pinch¼ tsp
- Fresh mint leaveshandful
- Cold water~4 cups
- Ice, to serveas needed

Cook the raw mangoes until soft: pressure-cook or boil for about 10 minutes, or roast them over a flame until the skin blisters. Cool, then scoop out the pulp and discard skin and stone.
Why: cooking softens the pulp and mellows the harsh raw sourness into a rounded tang. Fire-roasting adds a gentle smokiness, the classic version.

Blend the pulp with the jaggery, black salt, roasted cumin, pepper, mint and a cup of water into a smooth concentrate.
Why these three: black salt supplies the sodium and potassium you sweat out, roasted cumin adds a savoury depth and eases digestion, and the mint cools. Together they are the electrolytes and the flavour.

Strain if you like it smooth. Store the concentrate in the fridge; it keeps for several days.
Make ahead: keeping a jar of concentrate means a cold glass is a minute away on a hot afternoon, no daily cooking.

To serve, stir 2 to 3 tablespoons of concentrate into a glass of cold water, taste and adjust, and pour over ice with a sprig of mint.
Dilute to taste: more water and less concentrate keeps the sugar down while still doing the cooling, rehydrating job.
Three ways
1 · Classic
Sweet-sour-salty with mint and roasted cumin, over ice.
2 · Less sweet
Cut the jaggery by a third and dilute more; the salt and tang carry it.
3 · Spiced
Add a pinch of ground ginger or chaat masala for a sharper cooler.
