Why this recipe works

Matar paneer is a quiet nutrition win. Paneer is a complete, high-quality protein and the green peas add more protein and fibre. The gravy is built on onion and tomato, not cream, so it is lighter than the richer paneer dishes. The one rule, as always with paneer: add it at the end and barely cook it, so it stays soft.

    Bloom the cumin, then bhuna the onion, ginger-garlic and tomato until thick and the oil separates.

    Why bhuno: cooking the base until the oil separates removes the raw taste and concentrates the flavour, the foundation of the gravy.

    Add turmeric, garam masala and the peas, and cook until the peas are tender.

    Fold in the paneer and warm through briefly.

    Do not overcook: paneer turns rubbery when cooked hard or long, so it goes in at the end and barely simmers, just to warm through.

    Crush in the kasuri methi and finish.

An honest word

Matar paneer is a genuinely good weeknight dinner: high in protein from the paneer and peas, tomato-based rather than drowned in cream, and full of a vegetable most people happily eat. The one thing to remember is that paneer is high in saturated fat, so a sensible portion, plenty of peas, and a modest amount of oil keep it balanced. With a roti or rice, it is a properly complete meal.
