Why this recipe works

Aloo paratha is more sensible than it seems. The dough is whole-wheat atta, so it keeps the fibre and slower energy of the whole grain, and the potato filling is genuinely nourishing, it is the deep-frying and butter, not the potato, that get parathas their reputation.   • Potato, boiled and mashed3
  • Ajwain, green chilli, ginger1 tsp + 2 + 1 tsp
  • Coriander, garam masalato taste
  • Ghee or butter (to cook)1 tsp per paratha
  • Curd and pickle, to serveto taste

Method

    Make a soft whole-wheat dough and a spiced potato mash.

    Stuff a ball of dough with the potato, seal well, and roll out gently.

    Why seal well: a well-sealed, gently rolled paratha keeps the filling in and cooks evenly without the stuffing bursting out.

    Cook on a hot tawa with a little ghee until golden spots appear on both sides.

    Why a little ghee: a light smear is enough to crisp and flavour it, this is the main calorie lever, so a modest amount keeps the paratha wholesome.
