Organic, GM, and the myths about your vegetables

Is organic healthier? Are GM foods dangerous? Is broccoli "manufactured"? Three of the most confused questions in food, answered from the evidence, cutting through the marketing and the fear on every side.

The short answer

Organic food has lower pesticide residues, but is not clearly more nutritious, and conventional produce is safe. Approved GM foods are, by the strong scientific consensus, as safe to eat as conventional ones (and India barely grows any GM food crops anyway). And broccoli and coloured capsicums are not "manufactured", they are the results of ordinary plant breeding, some of it centuries old. The thing that actually moves your health is simply eating more vegetables, of any of these kinds.

Few corners of food are as loud, or as commercially motivated, as the debate over how produce is grown. There is money in selling organic at a premium, and there is money in fear of anything "chemical" or "GM". Cutting through all of it takes only one commitment: follow the actual evidence, wherever it points, and say plainly where it runs out.

Organic: what it is, and what it isn't

Organic simply means grown without synthetic pesticides and fertilisers, to a certified standard. On the evidence, two things are reasonably clear, and they pull in different directions.

What's true

Organic produce has lower pesticide residues and, in some reviews, a little more of certain antioxidants and less cadmium. Strong.

What's oversold

There is no clear evidence it is more nutritious or better for health, and conventional produce is safe within regulatory limits. Not supported.

So the honest position sits between the marketing on both sides. Organic is a reasonable choice if you value lower residues or the farming practices, and worth washing either way. But the health gain from choosing organic is small and unproven, while the health gain from eating plenty of vegetables at all is large and certain. If a budget forces a choice, buy more vegetables, not fewer organic ones.

GM food: the fear versus the evidence

Genetic modification means making a targeted change to a plant's genes, often to resist a pest or tolerate a herbicide. It sounds alarming, and the fear is understandable, but on the specific question of safety to eat, the science is unusually settled: major bodies including the US National Academies of Sciences and the World Health Organization conclude that the approved GM foods on the market are as safe to eat as their conventional counterparts. No credible evidence links them to harm in humans.

Two honest caveats keep this fair. First, "GM foods are safe to eat" is not the same as "there are no debates". There are legitimate discussions about herbicide use, ecology, corporate control of seed and the right to labelling, which are real, and separate from food safety. Second, in India this is largely theoretical for produce: the main GM crop grown is Bt cotton (a fibre, not a food), Bt brinjal is under a moratorium, and GM mustard remains contested and not widely grown. Most vegetables on an Indian plate are simply not GM.

The big one: your vegetables are not "manufactured"

A popular worry holds that odd or colourful vegetables, broccoli, cauliflower, bright red and yellow capsicums, are somehow artificial, engineered or fake. This is a misunderstanding of how nearly all our food came to be.

One plant, many vegetables

Brassica oleracea

Broccoli, cauliflower, cabbage, kale, Brussels sprouts and kohlrabi are all the same species, bred over centuries from one wild mustard plant by farmers selecting different parts. Not engineering. Ancient, ordinary plant breeding.

Colour is not a chemical

Red, yellow and orange capsicums are the same plant as green ones; green are usually just unripe, the coloured ones ripe or specific varieties. Even the orange carrot is a bred variety; the wild ones were purple and white.

This kind of selective breeding, choosing and re-sowing the best plants, is humanity's oldest biotechnology, and it is how almost everything we eat came to look and taste as it does, wheat, rice, dal, mango, banana, all of it. It is not modern genetic engineering, and it is certainly not "manufacturing". A red capsicum is as natural as a green chilli.

What actually matters

Step back and the noise falls away. The evidence says the things worth caring about are: eat a wide variety of vegetables and fruit, mostly whole and in season; wash your produce to remove surface residue and dirt; and spend your attention, and budget, on eating enough plants rather than on the label they come under. Organic or conventional, oddly shaped or brightly coloured, the vegetable in front of you is almost always the healthy choice.
