The Indian dairy toolkit

Dahi, chaas, makhan, malai, paneer, ghee. One pot of milk becomes half a dozen ingredients, each with its own job. Here is what each is for, which ones the evidence actually favours, and why the fermented ones sit so lightly.

The short answer

Indian kitchens turn milk into a whole toolkit. The most useful, on the evidence, are the fermented ones, dahi and chaas: protein, calcium, live cultures and, crucially, far easier to digest than plain milk. The rich ones, makhan, malai and ghee, are flavour and fat to use in proportion. Paneer is a compact protein. Match the tool to the job and dairy earns its place.

Most cuisines drink milk and leave it there. Indian cooking treats a pot of milk as raw material, and works it into a family of ingredients, each a small act of food science. Understanding the family tree makes the whole thing click.

Set milk with a spoon of old curd and it becomes dahi. Churn that dahi and it splits into makhan (fresh white butter) and chaas (buttermilk). Simmer the makhan and it clarifies into ghee. Skim boiled milk and you lift off malai. Split hot milk with a little acid and you get paneer. Six ingredients, one beginning.

The toolkit, one by one

Dahi curd / yogurt

Milk fermented by lactic bacteria. Protein, calcium and live cultures, cooling, and the base of raita, kadhi and marinades. Strong.

Chaas buttermilk / takra

Dahi churned and thinned with water and spices. Light, hydrating, low-fat and probiotic; the classic after-meal digestive. Strong.

Makhan white butter

Fresh butter churned from cream or dahi; unsalted, less processed than the shop kind. Flavour and fat, best in moderation.

Malai clotted cream

The rich skin lifted off boiled milk. For sweets and the odd luxurious gravy; a little goes a long way.

Paneer fresh cheese

Milk set with acid, drained. Compact protein and calcium; also high in saturated fat. A recipe.

Ghee clarified butter

Makhan simmered until the water and milk solids leave. A stable high-heat fat, in moderation. The full story.

What the evidence favours

Dairy is one of the most argued-over foods in nutrition, but a few things are reasonably settled. It is a genuine source of protein and calcium. And the fermented forms, dahi and chaas, come out well: yogurt is consistently linked to neutral or favourable cardiometabolic outcomes, and its live cultures may support the gut. The old worry about full-fat dairy has softened, especially for fermented dairy, where the "food matrix" seems to matter more than the fat alone. Sweets and cream-heavy restaurant gravies are the part to keep occasional, not dahi.

The lactose point, which matters here

Most adults of South Asian descent are, to some degree, lactose intolerant, and that is normal, not a defect. It is also exactly why the tradition leans on fermented dairy. The bacteria in dahi and chaas pre-digest much of the lactose, and their enzymes keep working in the gut, so many people who struggle with milk handle curd and buttermilk comfortably. Ghee has almost no lactose at all. The Indian dairy toolkit is, in effect, a set of workarounds for lactose that predate the science by centuries.

How to use them well

Treat the fermented ones as everyday and the rich ones as accents. A bowl of dahi or a glass of chaas most days; paneer when you want vegetarian protein; makhan, malai and ghee as flavour, measured in spoons, not ladles. That single distinction, ferment daily, fat in proportion, is most of what there is to know.

Make it at home

Set dahi

Warm milk to just-warm (not hot), whisk in a teaspoon of live curd, cover and leave somewhere warm 6 to 8 hours until set. The starter is the whole trick.

Spiced chaas

Whisk dahi with cold water to a thin drink; add roasted cumin, black salt, mint and coriander. Sweet-salt versions vary by region.

Churn makhan

Churn chilled cream or set dahi until it splits into soft white butter and buttermilk. Rinse the butter in cold water; simmer it later for ghee.
