Does amla keep its vitamin C when cooked or dried?

Amla is one of the richest natural sources of vitamin C, a nutrient famous for being fragile. So does drying it, cooking it or making murabba destroy it all? Amla turns out to be an unusual case.

Unlike most fruit, whose vitamin C is easily destroyed, amla keeps a surprising share of it through drying and cooking, shielded by its own tannins.1

Amla, the Indian gooseberry, has a reputation as a vitamin C powerhouse, and it earns it. But vitamin C is one of the most delicate nutrients there is, so surely the murabba, the dried candy, the pickle throw all of it away? Here amla breaks the usual rule.

A vitamin C giant

Amla is among the richest natural sources of vitamin C, far more, gram for gram, than an orange. That is the starting point, and it is a big one.

Vitamin C is normally fragile

In most foods, vitamin C is destroyed by heat, air, light and water. Boil a vegetable and much of its vitamin C ends up gone or in the cooking water. By that logic, dried or cooked amla should be nutritionally empty.

Amla’s trick: tannins

It is not, because amla is unusually rich in tannins and polyphenols that protect its vitamin C from oxidation. As a result, dried amla, amla powder, murabba and even the boiled fruit retain far more vitamin C than you would expect, studies repeatedly find unusually good retention.1

Fresh still wins, but processed counts

Fresh amla is still highest, so eat it in season. But the real lesson is that traditional amla preparations are not the waste of vitamin C you would assume, they are a genuine way to carry it through the year. And since vitamin C boosts iron absorption, amla alongside dal and greens does double duty (see the iron experiment).

    Fresh amla or amla juice has the most vitamin C.
